Chef Carla Hall Celebrates National Pancake Day

Carla Halls Lemon Ricotta Pancakes Ingredients Pancake Ingredients:  1 cup all-purpose flour 1 teaspoon baking powder 1/4 teaspoon baking soda 2 tablespoons granulated sugar pinch of salt 1 large egg 1/2 cup fresh ricotta (strained) 3/4 cup milk 3 tablespoons butter (melted + plus more for greasing pan) 3 tablespoons lemon oil 1 teaspoon vanilla extract powdered sugar for garnish  Lemon Oil Ingredients:  1 cup olive oil 1 lemon (cut into small pieces) pinch of salt
Directions:  Make lemon oil. Chop lemon into 6-8 pieces. Combine in a blender with 1 cup of oil to puree. Set aside in small bowl. Whisk the dry ingredients together in a large bowl. (flour, baking powder, baking soda, sugar, and salt) Whisk together wet ingredients in a separate bowl. (ricotta, eggs, milk, extract, and butter) Whisk wet ingredients into dry until fully incorporated. Preheat griddle or non-stick pan. Pour few tablespoons of batter onto griddle. Flip when bubbles start to appear. Cook until golden. Use up all that batter and serve with a spread of pulp, drizzle of lemon oil and powdered sugar!
